In other news, I’ve done NOTHING today. Well, I updated my recipe blog some more. That’s okay, its Christmas. Oh, I guess I sent off some resumes and cleaned the kitchen. Man, I did do things today. That’s just wrong.

I am not vegan, but I am also not one of those people who just must have meat at every meal. I’m also not lactose intolerant. Even if I was, there are so many non-dairy options I would just substitute.
I can’t stand zucchini, eggplant, olives, squash, root veggies like beats and turnip. Other than that I’ll pretty much eat anything. Just like a goat! Except a goat who doesn’t like zucchini.

Basmati rice (cooked in water no oils or seasonings) with choice veggies and maybe chicken cooked in a minimal amount of soy sauce to reduce charing. Make in larger batches for reheating for lunches.

When I get back to my apartment, I will send you this AMAZING lasagna recipe that is vegetarian…actually I’m 99% sure it is vegan, but if my brother, who hates soy and tofu and spinach loves it, its a win

I have an entire book on vegetarian recipes, and I will type up my favourites for you if you want. It includes healthy desserts, which is always a plus.

Jellied salads, however, are really odd. I just have difficulties eating dessert as a side dish with dinner.

If you feel industrious and want to type them up please do! I have only one vegetarian cookbook I got on a discount rack ($5!) and after bringing it home I now know why it was on a discount rack. Ha ha.

I don’t really have a lot of recipes (well, I do since I have many many cookbooks), because I tend to cook based on what’s in the house. I do recommend the Moosewood Restaurant’s series of cookbook, if you’re looking for good vegetarian recipes. Also Lentils (the legume, not a cookbook). Lentils are your friend. I put them into almost everything I can. My roomies in Germany thought I was obsessed…

Vegetarian Jambalaya
1 medium onion, finely chopped
1 cup chopped celery
1 cup chopped green pepper
1 cup sliced fresh mushrooms
2 garlic cloves, minced
1 tsp olive oil
3 cups chopped fresh tomatoes
2 cups water
1 cup uncooked long grain rice
2 Tbs reduced-sodium soy sauce
1 Tbs minced fresh parsley
1/4 tsp salt
1/4 tsp paprika
1/8 tsp cayenne pepper
1/8 tsp chili powder
1/8 tsp pepper
6 Tbs reduced-fat sour cream
1 In a large nonstick skillet, saute the onion, celery, green pepper, mushrooms and garlic in oil until tender. Stir in the tomatoes, water, rice, soy sauce, parsley, salt, paprika, cayenne, chili powder and pepper.
2 Transfer to a 2-1/2-qt. baking dish coated with nonstick cooking spray. Cover and bake at 350° for 65-70 minutes or until rice is tender and liquid is absorbed. Top each serving with 1 tablespoon sour cream
